A Tradition of Precision, Respect, and Craft
Our philosophy is rooted in respect: respect for ingredients, for technique, and for the guest. Every dish is prepared live, with precision and calm focus, allowing you to experience not only the flavors, but the craft behind them.
Founder Kenji Ishihara, after years as head chef and manager at a renowned teppanyaki restaurant in Munich, brought his experience and values to Nuremberg with a clear vision: to create a place where traditional Japanese cooking meets an intimate and refined dining experience.
Today, under the guidance of Head Chef Masatoshi Shikada and owner Akiko Shikada, Ishihara continues this legacy with a small, dedicated team. We believe that true quality does not require excess — only skill, patience, and the finest ingredients.
At Ishihara, teppanyaki is not a performance for spectacle alone, but a quiet dialogue between chef, fire, and guest.
